Mama's Happy Chocolate
The only problem with these is that I can't stop eating them. Which means it's SUPER convenient that they are quick and EASY to make with only 5 simple ingredients: cocoa powder, honey, coconut flakes, coconut oil, and almonds.


These yummy treats were created because I needed a Honey Mama's alternative after a holiday season of treating myself to a little square daily. Okay, sometimes a BIG square. Have you tried Honey Mama's chocolates? They're delish. And a TREAT. So you can imagine how happy I was when, in late November, I found them at my local grocery store on clearance for $0.50 each. They're normally $4.99 each, so at $0.50, I grabbed every last one. All 13 of them. 

So, as I savored and enjoyed them throughout the holidays, and even shared them with my family (it WAS Christmas, after all), I wondered what I would do once they were gone. We had all become quite chummy with having our Honey Mama's fix after dinner, so I needed a quick and easy alternative. Stat. 

I went to work creating my variation. Honestly? I like them better. I don't know what the difference is, but they just make me HAPPY. In fact, when I had them out to take some pictures this afternoon, my 16yo son came in and asked if he could have one. Then two. Then..... well, you know where this goes. 

Mama's Happy Chocolate Recipe:

2 tablespoons coconut oil
2 tablespoons raw honey
4 tablespoons unsweetened coconut
4 tablespoons cocoa powder
3 tablespoons almonds, pecans, or nut of choice

I used my mini Ninja chopper for this, which made it even EASIER. You can do it all by hand if you don't have a chopper, but if you like a quick and easy way to make chocolate, salsa, chop nuts, etc., the mini Ninja chopper is a dream. (I found mine on sale locally for $20, so you may be able to find it in a store near you for less than Amazon sells it. Find it on Amazon HERE.)

First, chop the nuts. Then add the remaining ingredients and chop/mix until well blended.


Pat into a container lined with parchment paper and refrigerate for several hours, or overnight.


Cut into squares and savor every last bite

And if you lick the parchment paper once the chocolate is gone, no one will judge you. Promise. ;)

Store in the refrigerator or freezer.


For some variations, try adding Peppermint essential oil, Orange essential oil, chopped cranberries, dried blueberries, fresh coffee grounds, cocoa nibs, sea salt.... whatever you LOVE in your chocolate. These are FUN to play around with, and with such a small little batch, there are lots of opportunities to try new flavors. Have fun!!!     So fun to ‘see’ you here, Sharon! The container I use is about 5” or so square. The last time I made them it was a smaller container. So I would say just use whatever you have. The 5” container makes them about 1/4” thick. And pink salt would be 👌🏼.
  2. Boom! You created your kitchen wizardry once again. You had to know I’d have questions. 😛. What size container did you use? How thick should it be? And, my addition would be, sprinkling pink Himalayan salt on top. 😊

I was living in survival mode.....

 
Prior to March of 2014, I had one goal: make it through another day. For three years, my husband had been sick in bed with Lyme disease, and during that same season I went through a scare with cancer. Our four children were quite young at the time and just meeting the basic needs of my family while caring for my sick husband was overwhelming on the best of days. I would often end the day on the couch, alone, with a snack and a movie. I was gaining weight, losing motivation, and feeling alone and hopeless. There's an old proverb that says, "Hope deferred makes the heart grow sick." My heart was sick.

Then in March of 2014, a friend invited me over to her house learn about Young Living essential oils. I wasn't interested. We had paid over $25,000 in medical bills to find answers for my husband and were left with no money and fewer answers. How on earth could essential oils be any kind of an answer when we had seen the best specialists in the country and tried so many different treatment plans? BUT, my friend made a really great cheesecake, so I went. My plan was to buy a bottle of lavender to support her home party, then be on my way after enjoying some cheesecake. 

What I hadn't expected was that on that night, our lives would forever change. As I sat in her family room, I learned about the power of pure, therapeutic essential oils that were so different from what I had purchased from the health food store. Sitting there, I felt hope beginning to rise for the first time in 3 years.

By the time my cheesecake was gone, I was ready. I knew that I needed these oils in my home. If they didn't work, my home would at least smell good! And yet somehow I knew that I had just found something so different from anything else on the market. I became determined to see changes in our health through the power of essential oils.

Now, years later, our lives have changed in ways I couldn't have ever imagined. We are healthy. We are strong. We are filled with hope for our family, and for the lives of friends and family that God brings to cross paths with us. It set us on a path toward better health, and it became a source of income that has let us travel, be more present with our children, and let my husband step away from corporate America to pursue his own business desires.
